Bacon-Cheese Biscuits

1/2 lb. sliced bacon
2 cups flour
2 and 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup shortening
3/4 cup buttermilk
1 cup cheddar cheese, shredded

Fry bacon in a heavy skillet until crisp, drain and cut into small pieces. Set aside and allow to cool slightly. Preheat oven to 450 degrees. In a large bowl, combine the flour, baking powder, soda, and salt. Cut in shortening. Add buttermilk and stir until batter is well blended. Sprinkle cheese and bacon into batter and stir lightly until distributed evenly. Drop by spoonfuls onto a greased baking sheet (or lined with foil) and bake for 12-14 minutes. A great biscuit for breakfast! Keep leftovers chilled until ready to be reheated and eaten.

Peach Crisp

2 cups rolled oats
2 cups brown sugar
2 teaspoons cinnamon
1/2 cup chopped walnuts
1 cup flour
1 cup (2 sticks) butter, softened
10-12 fresh peaches, peeled and sliced

Preheat oven to 350 degrees. Place sliced ripe peaches in an oblong 9 x 13 pan. Set aside. In a large bowl, combine oats, sugar, cinnamon, nuts, flour, and butter. Stir until butter is evenly distributed throughout and crumble over the peaches, being sure to completely cover them all. Bake for 40 minutes. Can serve with vanilla ice cream or whipped cream, if desired. Is delicious warm or cool.
