Taco Pie  

1 lb. lean ground beef
1 medium onion, chopped
1 clove garlic, minced
1 cup tomato sauce
1/2 cup sliced black olives
1 Tbsp. chili powder
6 corn tortillas
2 cups shredded cheddar cheese
1/2 cup water
Brown the meat, onion and garlic in a saucepan over medium-high heat. Drain fat. Add tomato sauce, olives, and chili powder. Grease a round casserole dish and place a layer of tortillas, meat mixture, and cheese. Repeat the layers and top with cheese. Pour water over all. Bake in a preheated oven at 375 degrees for 25 minutes. Allow to cool five minutes before cutting and serving. Serves 4-6. Serve with salad for a quick and delicious summertime dinner.


Old-Fashioned Jam Cake  

1 and 1/2 cups sugar
1/2 cup brown sugar
1 cup butter, softened
6 eggs
1 tsp. vanilla
1/2 cup buttermilk
2 cups flour
1/2 tsp. baking soda
2 cups jam (raspberry or strawberry is best)
2 tsps. cinnamon
1/2 tsp. each allspice and nutmeg
1/4 tsp. cloves

Cream butter, sugars and eggs. Mix dry ingredients. Put soda in buttermilk, add to mix. Stir in jam. Bake in greased square pan at 325 degrees for two hours. Dust with powdered sugar and let cool before serving.
