Ham & Broccoli Rolls  


2 cups broccoli florets, cooked and drained
8 slices Swiss cheese
8 slices cooked ham
1 can cream of celery soup 1/2 cup sour cream
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon prepared mustard

In a large bowl, mix soup, sour cream, mustard, salt and pepper. Set aside. On a flat surface, place a slice of ham on covered counter or cutting board. Place a slice of cheese over it. Top with a spoonful of broccoli. Repeat until all eight are assembled. Roll up and secure with toothpick. Place rolls in a greased oblong pan. Pour soup mixture over the top. Bake in a moderate oven (350 degrees) for 20-25 minutes, until cheese melts and broccoli has cooked through. Makes four servings.


Easy Baked Cheesecake  


3 eggs, beaten
2 packages cream cheese (8 ounces each)
1 cup sugar
1 teaspoon each vanilla and almond extract
3 cups sour cream
1 graham cracker crust (be sure pie pan is able to go into the oven)
1 can cherry pie filling, fresh strawberries, or
chocolate syrup for topping

Combine the beaten eggs, cream cheese, sugar, and extracts. Beat together until mixture is smooth. Blend in sour cream by stirring. Pour mixture into a cooled graham cracker crust. Bake in a moderate oven (375 degrees) for 35 to 40 minutes, until cheesecake sets. Allow to cool a bit, then refrigerate for at least 3 hours. Top with pie filling or fruit, or drizzle each slice with chocolate before serving.
