Old Time Barbecue Sauce  

2 Tablespoons butter
1 medium onion, chopped
1 can (8 oz.) tomato sauce
1 clove garlic, minced
2 Tablespoons vinegar
1 Tablespoon brown sugar
1 teaspoon salt
1 teaspoon dry mustard
1/2 teaspoon tabasco sauce
1/4 cup water

In a medium saucepan, combine all ingredients in the order listed. Stir to mix well, and bring to a boil. Stir often so that the mixture does not burn. Brush over hamburgers, steaks, chicken or other meats before grilling or roasting. The sauce brings an old-fashioned goodness that can't be found in commercial sauces. Great for a 4th of July picnic.


Peach Short Cake  

1 cup flour
1 teaspoon baking powder
1 cup granulated sugar
1 teaspoon salt
1 egg, well beaten
4 cups fresh, sliced peaches
Brown sugar sauce (recipe below)

Mix flour, baking powder, sugar, salt and egg to make a dough. Take peaches (or any other fresh fruit, like strawberries), and line them in the bottom of a greased square pan. Sprinkle with sugar, then add the dough over the top. Bake in a moderate oven (350 degrees) for about 40 minutes or until the top is golden brown. Top with brown sugar sauce: Take 1 cup of brown sugar (packed) and 1/4 cup hot water. Whisk together and heat until sugar is melted and liquid is bubbly. Pour over shortcake.
