South West Style Lasagna  

1 pound lean ground beef
2 cups stewed tomatoes
12 corn tortillas, torn in large pieces
2 cups cottage or ricotta cheese
1 cup cheddar cheese, shredded
1 egg
1 teaspoon each cumin, chili powder
1 clove garlic, chopped
Chopped onion, lettuce, tomatoes, sour cream
Brown beef, drain. Add stewed tomatoes and spices and heat through. Cover greased bottom of a large oblong dish with tortillas. Pour 1/2 beef mixture over tortillas. Mix cheeses and egg, spoon 1/2 of this mixture over beef. Repeat tortilla, beef and cheese layers. Bake in a moderate oven (350 degrees) for 30-40 minutes. Top with garnishes (onion, lettuce and tomatoes) and serve hot with sour cream and salsa, if desired.

Fresh Strawberry Pie  


1 pie shell
1 quart fresh strawberries, hulled
2 teaspoons sugar
1 cup strawberry juice and water (combined)
1 teaspoon cornstarch
1-3 ounce package of strawberry gelatin
Whipped cream
Bake pie shell as needed for a one-crust pie. Set aside. Wash and drain strawberries, cut out tops and slice into pieces. Add a few teaspoons of granulated sugar. Allow to sit for a few hours in refrigerator for juice to form in the bowl. Remove juice and add enough water to make one cup. Heat juice in saucepan over medium heat, add cornstarch and gelatin. Allow mixture to thicken slightly, then remove from heat. When slightly cooled, pour over berries in bowl. Allow to set until mixture thickens. Pour into cooled crust and let set 3 hours or overnight. Top with whipped cream.
