Johnny Appleseed Meatballs  

1 pound lean ground beef
1 egg, slightly beaten
1/2 cup bread crumbs
1 teaspoon salt
1 cup unsweetened applesauce
2 Tablespoons vegetable oil
1/3 cup ketchup
1/4 cup water

In a large bowl, mix together the ground beef, egg, bread crumbs, salt, and applesauce. Shape into about 20 meatballs. Brown meatballs in hot oil, drain. Keep meatballs in pan, add ketchup and water. Cover and allow to simmer, about 20 minutes. These meatballs are delicious with noodles, potatoes, rice, or by themselves. They are also great as appetizers.


Peanut Crunch Apple Pie  

1/2 cup chunky peanut butter
1/4 cup butter, softened
1/2 cup light brown sugar
1 cup sifted flour
1/4 teaspoon salt
4 cups of apple pie filling
1 pie shell (unbaked)

Blend peanut butter, butter, and brown sugar into flour until mixture is crumbly. Spoon apple pie filling into unbaked crust. Sprinkle peanut butter crumbs over the pie filling. Bake in a moderately hot oven (400 degrees), for 30 to 35 minutes. Pastry will be nicely browned and filling will be bubbly when done. Serve warm with a scoop of vanilla ice cream for a wonderful harvest-time dessert.
